Pete's Spice Fried Chicken Sando!


Here is a highly requested delicious dinner that will surely satisfy your cravings in no time! With limited steps and ingredients this recipe is sure to suit everyone. Pete's Spice adds the perfect blend of seasoning to the breaded chicken and really takes this sandwich to another level. Enjoy!

Serves 2

Here is what you'll need:

  • 4 boneless chicken thighs
  • 1 egg
  • 1 cup flour (for gluten free sub with 1/2 cup almond flour and 1/2 cup tapioca flour) 
  • Pete's Spice
  • Cayenne pepper
  • Oil of choice (we use avocado)
  • Bread of choice (we used brioche) 
  • Toppings (we used tomatoes, onions, pickles and a fry sauce)  

Instructions:

  • Place your chicken thighs on a cutting board and pound with a mallet until they are about 1/2 inch thick
  • Beat an egg in a bowl and set aside for your wash
  • Now make your breading by combining your flour with your spices. We eyeball everything but I would say 1/2 T of Pete's Spices and 1-2 tsp of cayenne pepper
  • Heat the oil in a skillet over medium heat (you could also skip this step and cook your thighs in the oven or air fryer)
  • Coat chicken in egg wash, then in flour mixture then add to hot skillet. Make sure you gently place it in the hot skillet so it does not splatter
  • Cook for about 5 minutes on each side until the chicken is crispy
  • Assembly your sandwich and dig in!
