Grilled Chicken Summer Salad

Throw together this easy summer salad to help keep you cool! This is the perfect meal for any summer day where you do not want to spend too much time in the kitchen.

Here is what you'll need:

  • Chicken breasts (thin cut)
  • Arugula 
  • Cherry Tomatoes 
  • Sliced almond
  • Avocado
  • Goat cheese (we used a honey goat cheese)
  • Olive Oil
  • Balsamic glaze (you can make your own but we just used store bought from Trader Joe's) 
  • Salad Dressing of choice (see our previous steak dinner post for our goal to salad dressing recipe)
  • Pete's Spice 


For the Chicken Breast:

  • Season both sides with Pete's Spice
  • Grill each side for 7 minutes until done (I used my Traeger Grill) 
  • Set aside and allow to rest

For the pasta:

  • Boil heavily salted water
  • Add noodles and cook until done
  • Drain and rinse with cold water to cool down
  • Add the noodles back to the pan and add olive oil and Pete's Spice
  • Set aside

For the Salad:

  • Toss your Arugula with your dressing of choice
  • Add in pasta, almonds, cherry tomatoes, goat cheese and avocado
  • Add your grilled chicken and finish with a balsamic glaze drizzle
