Summer is coming to a close so we are finishing it off with a light Grilled Chicken Salad! This is perfect for any weeknight meal when you want something delicious, refreshing and of course easy!
Serves 2-3
Here is what you'll need:
- 1 Package Chicken Breast Tenders
- 1-2 Corn on the cob
- 1 Package Romaine Lettuce
- 1/2 can Black Beans
- Cherry Tomatoes (10-15)
- 1/2 Avocado
- Goat Cheese
- Salad Dressing of Choice
- Pete's Spice
Instructions:
- Start by seasoning both sides of your chicken with Pete's Spice
- Add your chicken and corn to the grill (you can remove the corn husks or keep them on)
- While those are cooking, chop your romaine lettuce, cherry tomatoes and avocado
- Drain and rinse the black beans and combine in a bowl with the rest of your vegetables
- Remove your corn and chicken from the grill. Cut your chicken into bite size pieces and cut your corn off of the cob
- Add to your salad bowl
- Toss Salad with your dressing of choice
- Top Salad with goat cheese and another sprinkle of Pete's Spice
