Grilled Chicken Salad


 

Summer is coming to a close so we are finishing it off with a light Grilled Chicken Salad! This is perfect for any weeknight meal when you want something delicious, refreshing and of course easy!

Serves 2-3

Here is what you'll need:

  • 1 Package Chicken Breast Tenders
  • 1-2 Corn on the cob
  • 1 Package Romaine Lettuce
  • 1/2 can Black Beans
  • Cherry Tomatoes (10-15)
  • 1/2 Avocado 
  • Goat Cheese
  • Salad Dressing of Choice
  • Pete's Spice

Instructions:

  • Start by seasoning both sides of your chicken with Pete's Spice
  • Add your chicken and corn to the grill (you can remove the corn husks or keep them on)
  • While those are cooking, chop your romaine lettuce, cherry tomatoes and avocado 
  • Drain and rinse the black beans and combine in a bowl with the rest of your vegetables
  • Remove your corn and chicken from the grill. Cut your chicken into bite size pieces and cut your corn off of the cob
  • Add to your salad bowl
  • Toss Salad with your dressing of choice
  • Top Salad with goat cheese and another sprinkle of Pete's Spice
