Grilled Chicken and Veggie Dinner with Smashed Potatoes


After a long weekend a nice home cooked meal is exactly what I am craving. And given that summer is just around the corner I am looking for every excuse to fire up the grill! This Grilled Chicken with Veggies and Smashed Potatoes will not disappoint! 

Here is what you'll need:

  • Chicken Thighs
  • Veggies (I used Bell Peppers and Broccolini)
  • Mini potatoes 
  • Olive Oil
  • Minced Garlic
  • Rosemary 
  • Pete's Spice 

Instructions:

For the Chicken Thighs:

  • Season both sides with Pete's Spice
  • Cook each side for 7 minutes (I used my Traeger Grill) 

For the Veggies:

  • Combine your veggies in a bowl and toss with some olive oil and Pete's Spice
  • Wrap in foil and throw on your grill for 30 minutes

For the Smashed Potatoes:

  • Set oven to 425 Degrees
  • In a pot of salted boiling water, cook your mini potatoes for 15-20 minutes
  • Drain and add them to a baking pan
  • Using a fork smash each potato down (not too hard)
  • Drizzle with Olive Oil, Pete's Spice and Rosemary 
  • Bake them in the oven until they are a nice golden brown with slightly crispy edges (about 20-25 minutes)
